Bethany’s final Masters project named ‘Borðhald’ – an old Viking word used to describe a communal way of cooking and dining, sees the creation of an innovative Culinary Centre & Cookery School that acts as a means of heritage and food connection to the local area. The scheme aims to promote sustainable sourcing and production methods in an interactive and educational way, while championing local produce that the sea and land have to offer through activities such as foraging, harvesting, communal cooking and dining, instilling a cordial relationship between food, people and the landscape.
